Sam’s Easy-Peasy Peameal Bacon Roast!
This was Sam’s contribution for the virtual Johnson family potluck for Mom’s (Jacqueline Johnson’s) 75th birthday. Nothing could be more celebratory than an entire roast made of bacon. Happy birthday!
Score the peameal bacon (pork loin rolled in cornmeal) in a cross hatch pattern as shown above.
Baste with maple syrup and balsamic.
Add pepper to taste.
Cook at 375 until internal temp 160.
