Joan Kells Butter Tart Recipe

Butter Tarts – For 2 dozen

Ingredients for filling

  • 2 eggs
  • 1 and ½ cup brown sugar
  • 1 Tsp. of salt
  • 2 Tsp. of vanilla
  • 2 Tsp of vinegar
  • 1/2 cup corn syrup
  • 4 tbsp of butter

Instructions

  • Turn oven on to 450 and set shells out on LG. Cookie Sheet
  • Put Raisins in each shell (optional)
  • Combine eggs, sugar, salt, vanilla and vinegar in a medium-sized bowl
  • Melt 4 Tbsp of Butter in the glass measuring cup, cool slightly so the eggs don’t cook and add to the mixture using rubber scrapper.
  • ½ cup corn syrup and put it in bowl with scraper
  • Whisk and let sit for a minute and whisk again
  • You can pour direct from the large bowl or pour into the measuring cup and do a little at a time. If there is not an equal amount in each shell, you should move a bit with a teaspoon.
  • Bake for 9-12 minutes and check to see if done. If not bubbling – bake for another 1-2 minutes
