Joan Kells Butter Tart Recipe
Butter Tarts – For 2 dozen
Ingredients for filling
- 2 eggs
- 1 and ½ cup brown sugar
- 1 Tsp. of salt
- 2 Tsp. of vanilla
- 2 Tsp of vinegar
- 1/2 cup corn syrup
- 4 tbsp of butter
Instructions
- Turn oven on to 450 and set shells out on LG. Cookie Sheet
- Put Raisins in each shell (optional)
- Combine eggs, sugar, salt, vanilla and vinegar in a medium-sized bowl
- Melt 4 Tbsp of Butter in the glass measuring cup, cool slightly so the eggs don’t cook and add to the mixture using rubber scrapper.
- ½ cup corn syrup and put it in bowl with scraper
- Whisk and let sit for a minute and whisk again
- You can pour direct from the large bowl or pour into the measuring cup and do a little at a time. If there is not an equal amount in each shell, you should move a bit with a teaspoon.
- Bake for 9-12 minutes and check to see if done. If not bubbling – bake for another 1-2 minutes
